About the Wine: Unique and unique Californian Cabernet with a very rich, full and bold character. The wine exhibits powerful and concentrated aromas of ripe fruit, caramel, dark chocolate, vanilla and toasted coffee. It is a very impressive, heavy-bodied wine with a full body and a soft, round and juicy texture.

The Wanted Zin
GRAPES: 100% Primitivo
VINEYARD AREA: The Primitivo grapes are selected form low-yielding vineyards in
the Salento area of Southern Pug lia. The traditional Alberello basso vine training method is employed.
The plants are an average of 40 to 50 years old, with a plant density of approximately 5.000 plants per hectare.
HARVEST: Manual picking in late August.
VINIFICATION: After de-stemming, the grapes are not crushed,
allowing them to remain intact, reducing damage to the skins and optimizing colour extraction.
Fermentation take place at a controlled temperature of 24-25°C for 8-10 days.
Frequent remontage and delestage are carried out in the early st ages
of fermentation in order to achieve soft extraction of aromas and gentle tannins.
After racking, malolactic bacteria are added to induce malolactic fermentation.
AGING: 50% of the wine for 12 months in American oak barriques.
ALCOHOL: 14.5%
WINEMAKER’S NOTES: Intense ruby-red color, with a complex bouquet,
reminiscent of cherries, blueberries, coconut and vanilla.
The ageing in American oak adds a pleasant roasted and spicy aroma.
In the mouth it is full-bodied yet smooth and elegant.
The tannins are soft, supple and well balanced.
The finish is long and lingering, with a burst of spice and bright fruit at the end.

The Wanted Zin Cabernet Subvention
GRAPES 100% Cabernet Sauvignon
VINEYARD AREA The regions of Puglia and Sicily.
These two Southern Italian regions are ideal for the proper maturation of this grape variety.
TRAINING: Guyot; The plants are an average of 25 to 40 years old,
with a plant density which ranges from 4500 to 5000 plants per hectare.
HARVEST: Manual picking in mid to late September.
VINIFICATION: After de-stemming, the grapes are not crushed,
allowing them to remain intact, reducing damage to the skins and optimizing colour extraction.
Fermentation takes place at a controlled temperature of 24-25°C for 10 days.
Frequent reportage and delectate are carried out in the early stages of
fermentation in order to achieve soft extraction of aromas and gentle tannins.
Following fermentation the wine is kept in contact with the skins for an extra 3 days
to maximize extraction of colours and tannins.
After racking, malolactic bacteria are added to induce the secondary fermentation.
AGEING: 40% of the wine for 10 months in American oak baroques.
ALCOHOL: 14% WINEMAKER’S NOTES: Dark garnet in colour,
this wine begins with an extremely pleasant and dusty aroma of blackberry,
black cherry, vanilla and chocolate. In the mouth it is rich, juicy and succulent,
with elegant oaky notes. Full bodied yet balanced and complex, it displays a long and spicy lingering finish

VALPOLICELLA, ANTICHE TERRE VENETE
CLASSIFICATION: Dry Red Wine D.O.C..
GRAPES: Corvina Veronese, Corvinone and Rondinella.
PRESENTATION OF WINE: Valpolicella is one of the best-known Italian wines. Its typical stile is the result of the blending of selected grapes: Corvina and Rondinella. It is a well-structured wine, its color is bright ruby-red, hints of cherry.
PRODUCTION PROCESS: The grapes are harvested in mid September. They are pressed softly and the fermentation and maceration lasts for 8 days at a temperature around 25 °C, giving the wine a fresh fruitiness. The wine is then decanted and separated from all solid parts and left throughout winter in stainless steel tanks where the malolactic fermentation to be completed. Afterwards, in early spring, the wine is then bottled.
TOTAL ALCOHOL CONTENT: 12,5%.
TOTAL ACIDITY, IN TARTARIC ACID: 5.7 grams per liter.
SHELF LIFE: A wine preferably to be drunk very young and within the year. If the wine is stored properly at a constant temperature around 15 °C, in horizontal position in absence of light it will maintain and keep for up to 3 years.
COLOR: Intense, ruby red.
NOSE: Fruity of cherry, raspberry, strawberry.
TASTE: Soft, velvety, with rounded tannin well balanced with the acidity.
SERVE: To be served preferably at 16 to 18 °C.
FOOD MATCHING: Pastas, especially with tomato or/and meat sauces. It is a wine that can be used for the whole meal if made up of slightly rich dishes. Red meats in general, roasted or grilled. Goes well also with hard textured mature cheese and risotto.

TASTING NOTES
Intense ruby red colour. Complex, with a mix of red berries and spicy aromas of clove and black pepper. Also some delicate notes of chocolate and coffee that come from its time in oak. A structured and complex with pleasant tannins which bring
sweetness and a long finish. Spice combines with toasted notes and characteristic
red berry fruit of Malbec.
THE VINTAGE
After a dry Winter, we were surprised by an early Spring arrival. However, the cool temperatures came back by the end of January, which allowed to slow down the cycle and to balance the maturation process. We began harvesting the Pinot Gris unusually early, as mid-February. The grapes were picked early in the season to keep the natural acidity and preserve the aromatic freshness.

About the Wine: Chablis is great, which combines fruity with delicate minerals and lots of freshness. Has respectable statute of limitations. Shows fruit aromas and blooms in his youth that develop into dried fruits and roasted nuts as he matures.

SOAVE
CLASSIFICATION: Dry White Wine D.O.C..
GRAPES: Garganega, Trebbiano di Soave, Chardonnay. The grapes come from the northwest area of Verona.
PRODUCTION PROCESS: The grapes are pressed and left with the skins to macerate for about 6 hours after which the skins are separated from the juice and selected yeasts are added. Fermentation is carried out in temperature controlled stainless steel vats at around 14 to 16 ° C. for a period of 8 to 10 days. The wine is then stored a few months in stainless steel before being bottled.
TOTAL ALCOHOL CONTENT: 12,5%.
TOTAL ACIDITY, IN TARTARIC ACID: 5.8 grams per liter.
SHELF LIFE: A wine preferably to be drunk very young and within 3 years.
COLOR: Pale straw yellow.
NOSE: Fruity of apple and pear.
TASTE: This is a crisp fruity wine with a slight mineral finish. Soft and round in the mouth with a slight mineral lingering aftertaste.
SERVE: Preferably at 12 to 14 °C.
FOOD MATCHING: Fish, white meats, egg, or pastas with cheese or delicate sauces.

About the Wine: A great dry rosé with a classic Provence character. Very fresh wine with great complexity and delicate scents of strawberry, roses and blossoms.
